Headache after eating poultry

I cannot explain why I stopped tolerating poultry. For some time now, after eating chicken or turkey, I have had quite severe headaches, more brain fog and epigastric pain. I would like to add that I tolerate ground beef, eggs and offal (e.g. chicken liver) very well. Today I ate turkey for the first time since spring and I am feeling all the above symptoms again. Anyone had something similar? Any ideas?

I had some problems with smoked turkey last thanksgiving. I got super dizzy and light headed after eating it. I looked at the packaging and saw nitrates on the ingredient label which is the trigger for me.
